If with the mentioned partition settings the datastore showed up, these settings at least seem to be correct regarding the VMFS datastore itself. I can't tell you however what went wrong with the files or file allocation table on the datastore. The current options I see are either giving the disk to a restore company or try to contact who may be able to help. He's a data rescue specialist.
